Here's the recipe for this delicious vanilla cupcake :)
Ingredients:
- 125g butter - at room temperature, not melted
- 125g cake flower
- 125g caster sugar
- 1tsp baking powder
- 2 eggs
- Milk - by the tablespoon
- Preheat the oven to 160°C
- Grease your cupcake / muffin tin
- Combine all the ingredients in one bowl, excluding the milk
- Beat until the mixture is fluffy and mixed together
- Add the milk a tablespoon at a time until the mixture forms soft peaks - Must not be runny!
- The mixture should have a soft / stiff consistency
- Bake in an oven at 160°C for approximately 10 minutes
- When the cupcakes are creamy, turning light golden brown they are ready
- Take out of the oven and allow to cool completely on cooling racks
