Butter icing is one of those things that can be truly wonderful, or truly awful, depending on how much effort you are willing to put into it. Here's
Zolita's recipe for her beautifully creamy butter icing. Remember, it's called BUTTER icing, which means it must be made with butter, not margarine.
Ingredients:
- 250g butter
- 250g vegetable fat - Use Wooden Spoon
- 1kg sifted icing sugar
- Milk by the tablespoon
Method:
- Combine all the ingredients except for the milk
- Add the milk a tablespoon at a time until the mixture is very thick
- Whip the mixture on high
- When you think you've whipped it enough, whip it some more
- The final mixture should be white, fluffy and airy - It almost looks like dry ice-cream
Note: The secret is to whip the mixture. You can't over whip it, so keep on going until it's soft, stiff and fluffy.
