Zolita's Vanilla Cupcake Recipe

The secret to this recipe (or so I'm told) is BUTTER. Do not use margarine, not even the Stork margarine, you must use BUTTER.

Here's the recipe for this delicious vanilla cupcake :)

  • 125g butter - at room temperature, not melted
  • 125g cake flower
  • 125g caster sugar
  • 1tsp baking powder
  • 2 eggs
  • Milk - by the tablespoon
  • Preheat the oven to 160°C
  • Grease your cupcake / muffin tin
  • Combine all the ingredients in one bowl, excluding the milk
  • Beat until the mixture is fluffy and mixed together
  • Add the milk a tablespoon at a time until the mixture forms soft peaks - Must not be runny!
  • The mixture should have a soft / stiff consistency
  • Bake in an oven at 160°C for approximately 10 minutes
  • When the cupcakes are creamy, turning light golden brown they are ready
  • Take out of the oven and allow to cool completely on cooling racks
