How To Make : Cake Pops

Cake Pops by Zolita
Baking and, well, food in general really, often goes through trends. We've seen black and white wedding cakes, decorative cake wrappers, iced biscuits and now cake pops.

At first glance these sweet little morsels look like they are just a disaster waiting to happen, but they're actually really simple to put together. I found a beautiful step-by-step recipe for making cake pops which I've posted below.

Ingredients:
  • 1 box of Snowflake Creations Chocolate Cake mix (or Vanilla, whichever you prefer)
    • Check the box for the ingredients that you will need - eggs, milk, etc...
  • 400g butter icing
  • Sheet of wax paper
  • 450g chocolate
  • Candy decorations
  • Lollipop sticks
  • Florist foam
Method:
  • Bake the cake as per the instructions on the box
  • Once the cake is baked, allow to cool completely before proceeding
  • Crumble the cake into a large bowl - either with your hands or a fork
  • Spoon in the butter icing a spoonful at a time, mixing thoroughly
  • You want the consistency of the cake / icing mixture to be a thick, sticky, crumbly batter - must NOT be runny
  • Roll the cake batter into balls and place each ball on the wax paper
  • Push the lollipop stick gently into the cake ball until it's about half way in
  • Place the cake lollipops in the freezer for about an hour to firm up
  • Melt the chocolate over a double boiler, ensuring that it is thoroughly melted
  • Dip the cake balls into the chocolate and slowly roll them around until they are completely coated
  • Remove and continue to turn them until the excess chocolate has fallen off
  • Decorate with sprinkles or whatever cake decorations you have
  • Stand the sticks in the florist foam and leave in a cool dry place to dry
